Today was a test . . . AND I PASSED!!!!

So today was a busy day for me . . . I had to pack up and go out of town, went to a baby shower, and then went to my father's home, oh yeah, HE'S A CHEF!!! I didn't cheat at all, not once!!!! I am so proud of myself! One of my friends held a Hershey kiss in my face and was like "eat it, eat it, you know you want to." I just stared at her; mainly because I didn't want it! YES!!! I love the phrase "nothing tastes better than how skinny feels!" So true! Nighty nighty!

wonder why people have to put food in your face when you are dieting??? This has happened to me SEVERAL times!!!! I had a homemade chocolate chip cookie held in my face!!! Do you know how hard that was not to bite it!!!! LOL I bet you do! Good job on the blog!

Recipes: Phase 2

Here are some of my favorites recipes that keep me going in Phase 2!

Chili

-3.5 oz lean ground beef

-1 tbsp minced onion

- 2 cloves garlic minced

-1 cup chopped tomatoes

- 1/2 cup water

-pinch of garlic powder, onion powder, oregano

- 1/4 tsp chili powder

-Cayenne, salt, pepper to taste (all optional)

Brown ground beef, add onions and garlic. Stir in water and tomatoes. Add remaining ingredients and simmer slowly. Add water to prevent burning. Makes 1 serving (1 protein, 1 veg.)

Chicken Asparagus Bake

- 3.5 oz chicken breast, cubed or whole

-Asparagus (chopped or whole spears)

-1/2 cup chicken broth or water

-1 clove garlic, minced

-2 tbsp onion chopped

-salt and pepper

-dash of paprika (optional)

- 1 Melba Toast crushed (optional)

Place chicken and asparagus in small baking dish. Mix chicken broth, garlic, onion, salt and pepper, and pour over chicken. Sprinkle with crushed Melba toast crumbs and paprika. Bake at 375 for 30 minuntes or until hot and bubbly. Makes 1

Savory Baked Chicken

-1 serving Melba Toast crumbs

- 1/4 tsp onion powder

-1/4 tsp garlic powder

-pinches of thyme, rosemary

-1 tsp parsley

-1/2 cup chicken broth or water

- 2 tbsp lemon juice

-1 tbsp Bragg's liquid aminos

- 3.5 oz Chicken breasts

- salt and pepper to taste

Combine Melba Toast crumbs with all dry ingredients. Mix broth, lemon juice, and liquid aminos in a small bowl. Dip chicken into liquid mixture, and coat with crumb mixture. Bake at 350 for approximately 20 or until cooked thoroughly. Makes 1 serving (1 protein, 1 Melba Toast)
